It's Pumpkin Pie Day

Tonight I have another girls scrapbook night. The theme is Thanksgiving, so I thought it was fitting to make a Pumpkin Cheesecake for the event! The kids were more than excited to help. If it seems like these two cook a lot...THEY DO! Can't get enough of it in fact. Some days I am more patient with their "help" than others, probably because I am human and not an angel mother-but we try.
Today was shockingly very calm-which surprised me because this was the first time we tried this recipe and it was pretty involved....especially considering two extra special helpers along side me. However-I read the directions, split the ingredients between them and THEY did the work. It was nothing short of A-M-A-Z-I-N-G! Each time they get more and more precise and careful about what they are doing. (Insert tears from mom here :)

Recipe is from my favorite cooking blog-Our Best Bites. Here is the recipe:
Pumpkin Cheesecake with Pecan-Gingersnap Crust
Recipe by Our Best Bites

Crust:
1 3/4 C gingersnap crumbs (about 30 small cookies)
6T real butter, melted
3 T brown sugar
3/4 C ground pecans

Filling:
3 8oz blocks cream cheese
3/4 C canned pumpkin puree
6 oz melted white chocolate (that's about 1 C white chocolate chips)
1 C sugar
3 eggs
2 t vanilla
1/4 t nutmeg
1 1/2 t cinnamon
1/8 t cloves

Topping: 
- 1 C whipping cream, beat with 1/2 tsp vanilla and 4 Tbs powdered sugar until medium peaks form.

- 1/3 C roughly chopped pecans, either toasted or caramelized


- 2 Tablespoons jarred caramel sauce


Since the kids were such awesome helpers today-I whipped up some Pumpkin Pie Playdough and they've been busy for the past hour! HORRAY for Pumpkin Pie Day!
